For this weeknight dinner, you’ll need cheese tortellini and vegetables. First brown butter in the pan then toss in your favorite veggies like diced zucchini, green peas, grape or sun-dried tomatoes and spinach. Add a 1/2 to 1 cup of chicken broth and let your dish simmer. Sprinkle on some Parmesan cheese and voila! You’ve got a delicious, healthy meal.
